Verfahren zur Umwandlung von 3-MCPD
Das erfindungsmäßige Verfahren baut das krebserregende 3-MCPD und seine Mono- und Diesterderivate durch enzymatische Umsetzung mit einer Dehalogenase und anschließende enzymatische Umsetzung mit einer Epoxid-Hydrolase ab. Das 3-MCPD bildet sich in erster Linie während verschiedener lebensmitteltechnischer Verarbeitungsprozesse, bei denen Fette und Salze gemeinsam hohen Temperaturen ausgesetzt werden.
